I'm obsessed with lentils at the moment, as I'm keen to eat more protein while also wanting to eat less meat. These little gems are high in protein, provide fibre, iron, and magnesium, plus they're versatile, budget-friendly, and easy to cook.

I love that lentils are one of the pulses that don't need to be soaked overnight, so if you're short on time or not a planner, you can still cook with them. And don't forget that canned lentils are totally fine to use—just drain and rinse them well
