

When the weather cools and mushrooms are in season, buy a bag and get cooking. Mushrooms are a versatile ingredient in the kitchen, they can be baked, sautéed, or braised. They're delicious in pasta dishes, risotto, or ragus, as well as curries, stir fries and sauces and soups.
There is an enormous variety of mushrooms out there, so reach past the button mushrooms and experiment with different textures and flavours.
If you're new to eating mushrooms, or trying to encourage kids to partake, use a box grater and grate whole mushrooms, and sauté in a hot pan with onions and garlic before adding to a stew or bolognese.
