Date Slab with Bourbon Caramel

The elixir here is half a kilo of dates in one little cake and the bourbon addition to the caramel. It’s also two bowls, a ‘quick-stir-and-done’ sort of baking, no aerating of batters requiring mixers and attachments. It’s quick ’n’ dirty, and factors in the importance of immediacy.

500 g dried pitted date

2 tsp bicarbonate of soda (baking soda)

550 ml boiling water

2 tsp vanilla bean paste

165 g caster sugar (superfine sugar)

165 g brown sugar

2 free-range eggs, organic

270 g plain flour (all-purpose flour)

2 tsp baking powder

185 ‒ 250 ml caramel, see my recipe

Bourbon Caramel

1 tbsp bourbon, smoky

60 ml caramel, plus extra if needed, see my recipe

Method 7

Start cooking
Step 1

Preheat the oven to 170˚C (340˚F). Butter a 25 x 35 cm (10 x 14 in) glass or metal baking dish.

Step 2

Add the to a bowl with the . Pour the over and set aside until the dates look pulpy and soft, about 10 minutes. Add the dates and soaking liquid to a food processor and blitz briefly — this is just to get rid of any random residual chunky bits.

Step 3

Combine the , and in a large bowl and whisk until the mixture is smooth and you get ribbons when you lift up a spoon of mixture. Add the date mixture and mix to fully incorporate. Add the , and a pinch of salt and gently fold this mixture through the date mixture until just incorporated.

Step 4

Pour the batter into the dish and bake for about 35–45 minutes, or until a skewer inserted in the centre comes out clean. Allow to cool in the dish for at least 40 minutes before serving.

Step 5

Using a skewer, poke multiple holes across the surface of the cake. Pour over the , spreading it across the cake and into the holes you created with the skewer. Cover with plastic wrap and set aside for the cake to absorb the glorious caramel.

Step 6

When ready to serve, add the remaining and to a saucepan and place over low heat. Warm through and whisk to ensure the bourbon is fully incorporated.

Step 7

Slice the slab into generous squares. Drizzle over some of the bourbon caramel and serve or also add a generous dollop of ice cream for that extra hedonistic pleasure.

Delicious, deceptively light and enjoyed by everyone! I accidentally forgot about the Bourbon. It made a huge quantity. I've a few servings in the freezer for sweet emergencies.

I think this recipe is missing the fat content/ ingredient which would give it a crumbly and more moist kind of texture. I kept checking back on the list of ingredients and couldn’t spot either butter/oil as part of the recipe. Turned out a little rubbery instead.

The recipe was pretty straightforward and absolutely delicious- so moist. I poked the holes and added the caramel straight after it came out of the oven. As the cake pan was still hot, I placed a baking sheet on top instead of plastic wrap (I try not to use it anyway). I recommend this one as full of flavour, but not too sweet. The caramel on top was added for serving, the caramel added after cooking was fully absorbed.
