Lemon Tagliolini (Tagliolini al Limone)

Sometimes I am feeling particularly adventurous and energetic enough to cook something new or fiddly, and sometimes I just want something familiar, fast and guaranteed to be tasty. This dish is one of the latter – it takes almost no effort and is my ultimate quick meal.

Any pasta shape can work with this. With the silky, creamy, tangy sauce of lemon and zest, I particularly like something long and flat, like bavette or tagliolini. A dash of cream binds everything together, but Marco sometimes likes to add caprino (soft and tangy goat’s curd) instead. The sauce can be made in the time it takes the pasta to cook. If you’re in a real hurry to get food on the table, you can buy fresh pasta (as opposed to dried) and it only takes minutes to cook – and you’ll still be able to make the sauce in time.

50 g butter

1 tbsp extra-virgin olive oil

125 ml pouring cream, (single/light cream)

50 g pecorino, grated

salt and freshly ground black pepper, to taste

Step 1

Put the in a large pot of boiling, well-salted water.

Step 2

Finely grate the with a microplane for their zest (be careful not to use any of the white pith, as it’s unpleasantly bitter). Cut the lemons in half and squeeze all the juice from them. Set the zest and juice aside.

Step 3

Put the and in a frying pan to melt over medium heat. Once melted, add the lemon zest and let it infuse for about 1 minute, stirring (do not let the lemon burn). Add the lemon juice and let it simmer for 3 minutes. Add the and about half the , and season with salt and pepper. Cook for a further 1–2 minutes or until thick. Remove from the heat.

Step 4

Drain the pasta when al dente, but save about 125 ml (4 fl oz/½ cup) of the pasta cooking water. Toss the in the frying pan with the lemon sauce to coat. Add some extra pasta water if it’s looking dry. Serve with the rest of the grated .

Seek out organic lemons, as they haven’t been waxed or treated with pesticides, and since the flavour of this dish relies mostly on their zest, those kinds of treatments are the last thing you want to taste. Do give them a good rinse under running water and pat dry before using, though.

Loved this simple dish - I did add in some sliced garlic, chillies, capers and fresh dill at the end.

Quick, tasty and easy - I added a grated zucchini into the sauce (which is why it looks a lil lumpy in the pic) which added some nice texture to the dish.

I must have used too big a lemon because the pasta was a tad zingy ! The sauce was delicious. Will try again with a bit less lemon juice .

I highly recommend this if you need an easy dinner and have lots of lemons on hand. It was completely unexpected and delicious.

This sauce was easy to make yet big on taste with the creamy base and tangy lemony flavours from the zest and juice. I used fettucine and didn't skimp on the cream and cheese. I think this would make a lovely summer pasta dish where you want to sit on your deck sipping wine and watching the sun go down. Bring on those warm, summer nights!
