8 ‒ 10 tomatoes, roughly chopped, i used a combination of vine-ripened and field

2 capsicum, roughly chopped

3 ‒ 5 garlic cloves, whole

1⁄2 tbsp olive oil, plus extra for cooking sausages

4 ‒ 6 sausages, casing removed, i used coles pork italian sausages

1⁄2 tsp chilli flakes

1⁄3 cup cream

basil leaves, fresh

pasta, of your choice, such as calamarata

salt and pepper, to taste

parmesan cheese, for serving

Start cooking
Step 1

Preheat oven to 200c

Step 2

Roughly chop your and and add it to a baking tray with your . Season with , salt and pepper.

Step 3

Place baking tray in the oven for 20-30minutes depending on your liking. I usually like to keep it in as long as possible.

Step 4

In the meantime - take the casing off your and add them to a hot pan with and your . The sausages are seasoned enough so they do not need any extra.

Step 5

Once the are blistered, take the baking tray out of the oven. Place everything into a blender for a few seconds to make a sauce.

Step 6

Add sauce to and mix well.

Step 7

Prepare pasta per packet instructions (or you could use fresh) and reserve a cup of pasta water.

Step 8

Add pasta to sausage mixture along with your , basil and reserved pasta water.

Step 9

Stir well and allow 1-2 minutes for pasta to emulsify.

Step 10

Serve with Parmesan and enjoy 🍝🤍

I cooked this quickly by frying onion, garlic, fresh tomatoes, grated carrot then added passata, dried herbs, angus beef sausages. It was delicious. I cooked gf noodles for myself but rigatoni for the fam.

Super easy, quite yum. Added some extra basil we needed to use into the sauce, as well as doubled the chilli for a good kick. I was only making two serves so was a little bit tricky to figure out how much pasta to cook and I almost didn’t adjust the reserved pasta water but managed to get over that hurdle and enjoyed the result!
