
Thai massaman sausage rolls are a fun twist on the traditional sausage roll. They bring a little bit of spice and kick! A great quick dinner or snack to serve with tomato sauce.
2 tbsp Thai massaman curry paste
1 onion, roughly chopped
1 carrot, peeled, roughly chopped
2 stalks celery, roughly chopped
2 cloves garlic, peeled
500 g beef mince
1⁄2 cup breadcrumbs
1⁄2 tsp salt
1⁄2 tsp black pepper
1 egg
1 tbsp olive oil
4 sheets puff pastry
1 egg, beaten, for egg wash
sesame seeds, for sprinkling

Preheat oven to 180C fan forced. In a food processor, blitz the , , , and until finely chopped. Add the and pulse to combine.
In a large bowl, combine the , , , , , , and the vegetable and curry paste mixture. Mix well to combine.
Cut each in half. Divide the meat mixture evenly along the long edge of each pastry piece and shape into a log. Roll up the pastry to enclose the filling, placing the seam side down.
Brush the tops of the rolls with the beaten and sprinkle with sesame seeds.
Cut each roll into smaller pieces if desired, and place on a lined baking tray.
Bake at 180C fan forced for 25 minutes or until golden brown.
I used Thai massaman, but you can use any curry paste you have. Red Thai curry paste works well too.
