800 ‒ 1000 g chicken thigh fillets, skinless and boneless
2 stalks lemongrass, roughly chopped
2 garlic cloves, crushed
2 tbsp lime juice
1⁄2 birdseye chilli, fresh, roughly chopped
2 tbsp fish sauce
2 tbsp brown sugar
1 tbsp vegetable oil
3 tbsp soy sauce

1⁄2 head butter leaf lettuce, washed & dried
500 g vermicelli rice noodles, cooked and cooled slightly
10 ‒ 12 rice paper wrappers
3 tbsp hoisin sauce
2 tbsp crunchy peanut butter
2 tbsp sriracha
