Kickass Potatoes

I call these 'Kickass Potatoes' because everyone who eats them gets very impressed. Let's say they are a version of Desi fries, potatoes that are baked with spices and are super addictive. Serve them on their own or with anything you like and they will surely impress everyone.

They are so easy to make that I am not even sure if I can say that there is a recipe. Try them and you will love them.

4 ‒ 5 large potatoes, cut into desired shape, skin on

1⁄2 cup ghee

salt, as per taste

1 1⁄2 tsp red chilli powder, or less

2 tsp coriander powder

1 1⁄2 tsp turmeric powder

1 tsp amchoor powder (dry mango powder)

1 tbsp sesame seeds, optional

1 tbsp kasuri methi (fenugreek leaves)

Start cooking
Step 1

Pre heat oven at 180 degrees

Step 2

Cut the with skin on in any shape you desire. Boil them in a big pan covered in water with a tsp of salt. We don't want the potatoes to be completely cooked when boiled but this step helps give them a delicious crispy bite when baked. Drain and wait at least ten minutes to let the water drain and dry the potatoes a little.

Step 3

In a small bowl, add the , , , , and . Pour this mixture over the and mix everything well.

Step 4

Place the in a baking tray and pour the laced with spices. Bake for 15 minutes.

Step 5

Remove from the oven and add the and . Bake for another 10 minutes till crispy and golden.

So good. Flavour was delicious even though I was missing a couple of ingredients I don’t have. I also baked for much longer and higher heat to get the wedges crispy.

These were a fun change to roast potatoes. My ghee was solid so I had to melt it to mix with the spices. I cooked mine for an extra 15 minutes at Step 4, as I like my potatoes crispy. After finishing the potatoes I had a lot of ghee/spice mix leftover, which was good spread on toasted Turkish bread.

Simple dinner by itself. I really enjoyed using a different variety of spices and partly cooking the wedges before baking was great.
