Lemon & Garlic Chicken Wings

This was one of my favourite dishes growing up. I don’t even like wings but I love these. They’re ridiculous. My mum often makes this dish as my daughter loves it. The meat literally falls off the bone and the lemony, garlicky flavour is always guaranteed to make you reach for another.

18 chicken wings, cut in half at the joint

1 lemon, finely sliced

1 tbsp olive oil

200 ml lemon juice

2 tbsp garlic paste

1 handful coriander leaves, finely chopped

1 tsp nigella seeds

Start cooking
Step 1

Preheat the oven to 260°C or the highest temperature it will go.

Step 2

Wash the and place in a large bowl. Season with salt and toss with the .

Step 3

Place the wings snugly into a baking tray. Drizzle with the and place in the oven for about 40 minutes or until browned.

Step 4

Carefully turn the wings over. Combine the and the and pour over the wings. Return to the oven and cook for a further 15 minutes.

Step 5

Transfer the wings to a serving platter and garnish with the and .

Step 6

Eat straight away. If you’re not going to eat the wings immediately, leave them in the tray and cover with foil to prevent drying out.

I had a chook rather than wings. I love how the nigella seeds and lemon make for a crispy, peppery skin and meat that was so juicy. Yum!
