1 cup caster sugar, divided
1⁄3 cup lemon juice, rind of 2 lemons
250 ml milk
40 g melted butter
1⁄2 cup self-raising flour, sifted

In a large bowl, beat the egg yolks and half the until creamy. Add the , finely grated lemon rind, , , and sifted . Mix until well combined.
In a separate clean bowl, beat the whites to soft peaks, then slowly add the remaining , beating until glossy.
Gently fold the white mixture into the mixture in 3 batches, being careful not to deflate the mixture.
Pour the mixture into the prepared ramekins, filling each about 3⁄4 full.
Place the filled ramekins in a deep baking dish and pour hot water into the dish until it comes halfway up the sides of the ramekins.
Bake at 175˚C (or 155˚C fan) for 25-30 mins until set and golden.
Dust with icing sugar and serve warm with a scoop of ice cream.
