Nothing naughty in these chicken nuggets. Ideal to freeze. Either pan fry or air fry, they are an easy fast meal for the kids with hidden veggies too.

No guilt, all goodness. These chicken nuggets are freezer-friendly, super easy to pan-fry or air fry, and packed with hidden veggies. Perfect for busy days!

1⁄3 cup rolled oats

1 carrot, finely grated

1 zucchini, finely grated

500 g chicken mince

1 egg

1 tbsp chia seeds

1 tsp beef bone concentrate, optional

1 tbsp parmesan, finely grated

1 cup dried breadcrumbs

butter, for frying

olive oil spray, for air frying

Start cooking
Step 1

Place in a blender & blend until fine. Set aside.

Step 2

Combine the finely grated , finely grated , , , , , and finely grated in a bowl and mix well to combine.

Step 3

Combine the and blended in a shallow tray. Shape tablespoons of the chicken mixture into flat patty shapes. Press each patty into the crumb mixture and place on a large baking tray lined with non-stick baking paper.

Step 4

Freeze for 2 hours, or until frozen. Store in an airtight container in the freezer.

Step 5

TO COOK: Heat butter or oil in a small frying pan over medium-low heat. Add the nuggets (from frozen) and cook for 3-4 minutes on each side, or until golden and cooked through.

Step 6

AIRFRYER: Preheat air fryer for 5 minutes. Lightly spray nuggets with olive oil spray. Cook at 180C for 5 minutes, each side.

We baked instead of fried and they were delish!

Easy recipe to make and liked the extra veggies in it!! Used grated cheddar instead of parmesan, and an egg replacement instead of a real egg. Baked, rather than fried, at 180 degrees Celsius for 20 minutes, then 200 degrees Celsius for another 20 minutes. Had it with baked turmeric cauliflower (also on Clove) and made extra tahini / lemon / yoghurt sauce to go with the nuggets.
