Who doesn't love a fritter? To make this even more delicious i've added halloumi cheese! Perfect breakfast, brunch, lunch or dinner recipe.

300 g zucchini, coarsely grated

1⁄2 tsp salt

200 g haloumi, coarsely grated

3⁄4 cup peas, cooked and crushed

1⁄2 cup grated parmesan

1⁄2 cup plain flour

1⁄2 tsp baking powder

Pinch dried chilli flakes

2 eggs, lightly beaten

1 cup vegetable oil

4 radishes, thinly sliced

4 baby cucumbers, sliced

micro herbs, to serve, optional

Start cooking
Step 1

Mix the and and place into a sieve or colander set over a large bowl (make sure the bottom of sieve is well clear of the base of the bowl). Stand for 15 minutes, then press down to remove excess moisture.

Meanwhile, place the , , , , , and into a mixing bowl and mix until well combined. Add the , discarding liquid.

Step 3

Heat the in a large heavy based frypan over a medium heat. Place ½ cups of the mixture into the pan and cook for about 3 minutes on each side or until golden and cooked through. Drain on paper towel, and repeat with remaining mixture.

Step 4

For the dill tzatziki, combine the yoghurt, cumin and dill in a small bowl.

Step 5

Serve the fritters with a dollop of the dill tzatziki, the , and micro herbs, if using.

Delicious. So light and fluffy. Added an extra egg because mine were a little small. I only had one block of halloumi so added extra Parmesan cheese.
Used up the two zucchini sitting at the bottom of the fridge . Added a small carrot and a small onion as I didn’t have the peas and not enough zucchini. Used feta as I didn’t have halloumi. Added home made chilli jam as a topping. Baked in oven 180 degrees Celsius for 30 minutes.
