A refreshing and delicious summer salad that is packed with flavour. A great salad to bring when you have to 'bring a plate'. This is always a crowd pleaser at Christmas when mangoes and avocados are in abundance!

Salad Ingredients

1 block halloumi, pan-fried with a drizzle of honey

2 mangoes, ripe, diced

2 avocados, diced

1 red capsicum, finely diced

1⁄2 cucumber (Lebanese cucumber), deseeded and diced

1⁄4 red onion, finely diced, pickled

1 bunch coriander, finely diced

tajin seasoning, extra, to taste

Red Onion Pickle

3 tbsp apple cider vinegar

4 tsp caster sugar

1⁄4 cup hot water

salt and pepper, to taste

Lime And Tajin Dressing

1⁄4 cup lime juice

2 tsp sugar

1 tbsp olive oil

1 tsp tajin seasoning

salt and pepper, to taste

Cut the block of in half lengthways. Then into 1 cm strips. Pan fry on medium heat with a drizzle of honey. It should take approx 1-2 mins on each side, pan fry until golden brown.

Step 6

Pickle the with , , , and salt and pepper. You can do a quick pickle for 30 mins or leave overnight if making it the day before.

Step 7

Mix , , , , salt and pepper for the dressing.

Step 8

Combine all ingredients in a bowl, top with extra tajin to taste and serve.

Made this and it was a definite crowd pleaser! I couldn't got find ANYYYY mangoes so I used ripe plums and they worked beautifully. The only thing recipe wise I was a bit confused about (being a very novice cook) was the pan frying the block of haloumi. I wasn't sure if that meant frying the whole thing or slicing it with a drizzle of honey, I've never just pan fried it as a block so would love some clarification. Other than that, a very simple and delicious recipe and I'd make it again for sure.
