Simple recipe. Just cut the veg, season, and toss it in the pan. I’d recommend trimming the bottom off the fennel though as mine was a bit tough to eat. The sweetness from the tomatoes, the saltiness from the capers, and the subtle licorice flavour from the fennel made a really nice combo. Easy and full of flavour!

Easy and delicious way to cook fennel. I had some smaller tomatoes, so I halved them instead of doing a special shopping by trip and it turned out beautifully. I also subbed pickled green peppercorns because I don’t realise I was out of capers until too late, so I left out the ground pepper.
