Start cooking
Step 1

Preheat oven to 200°C. Cut from the stem, cutting any larger ones in half lengthwise, and place in a bowl.

Line a large flat baking tray with baking paper and place the seasoned in a single layer, leaving a little space between each piece.

Roast for 15 minutes, or until tender and starting to char on the edges. Meanwhile, grate the on the fine side of a box grater and set aside. You should have about 1 cup of grated parmesan.

Step 5

Remove from the oven and sprinkle each floret generously with the grated . Place back in the oven for about 10-15 minutes, until the cheese is melted and golden.

Step 6

Remove tray from oven and set aside to cool completely. Transfer to a plate and serve.
