Lentils and Rice with Yoghurt (Mudardara)

This recipe has a number of variations across Middle Eastern cultures, and I enjoy it most with yoghurt and fresh herbs. You can also eat it covered in caramelised or fried onions.

For this recipe, soak your rice for 15-20 minutes before cooking to kick start the absorption process and speed up the cooking process.

You will need a large soup pot for this recipe and a frying pan for onion toppings.

1 1⁄2 cups green lentils, soaked and drained

1 cup basmati rice, soaked and drained

1 brown onion, medium, diced

1 tsp ground cumin

3 ‒ 4 bay leaves

1 tsp salt, or more as required

5 cups water

To Serve

1 brown onion, medium, sliced

1⁄2 lemon, juiced

4 sprigs dill, chopped roughly

Start cooking
Step 1

In a bowl cover the in and set aside.

Step 2

Dice the finely and place in a large pot on medium heat with a drizzle of olive oil, stirring until translucent and cooked. Add and and mix through for 2 minutes on medium heat.

Then add 4 cups of water, and bring to boil for 10 minutes until have absorbed some of the water but not fully cooked.

Step 4

Drain the and rinse, then add to the pot of with an extra 1 cup of and and stir together. Cover the pot and let it simmer on low-medium heat for an additional 20 minutes until most of the water has been absorbed. Check on the rice and occasionally stir through only if it's sticking to bottom.

Step 5

Once the has cooked through, remove from heat and let sit, covered, for an additional 10 minutes, so the rice can steam and absorb the remaining liquid.

Step 6

Meanwhile, in a separate pan heat about 1 tbsp of olive oil and add the , season well with salt and pepper and cook until caramelised.

Step 7

Serve your rice with a topping of caramelised onions, , and and enjoy!

Once the lentils are half cooked you will add the rice, extra water and bring to boil. It's important in this step that you don't mix it together as it's coming to boil as stirring will activate the starch and make the dish clumpy. However, if you find the rice and lentils are sticking to the bottom, mix through lightly every 5 minutes to ensure an even boil.

Cooking rice is like cooking pasta. Don't forget to season it with salt while it's cooking!

Tasty dish and easy to make. Mum and I aren’t huge eaters so I reduced the recommended quantities to a third and the dish turned out well. I used half a small onion to cook with the rice and lentils, and the other half for the garnish. I used rosemary from the garden instead of bay leaves. I used coriander from the garden instead of dill. I make my own yoghurt, and usually strain in cheesecloth so I used the curds for the dish. No salt added due to health reasons, but the lemon juice, onion and spices made up for it. The prawns were added on top of the rice towards the end to cook .
