Quick Carrot & Ginger Salad

If you want to get veggies on the table quick sticks, make this simple grated salad. It's big on flavor and only takes 10 minutes. Fresh ginger and lots of lime make this salad the perfect side to curries, grilled fish, fried eggs, or on top of rice bowls.

Start cooking
Step 1

In a small pan over low to medium heat, gently toast the for 3-5 minutes or until golden. Turn off the heat and allow to cool.

Step 2

Peel the and grate them on the coarse side of a box grater, directly into a large bowl. Grate the on the fine side of the box grater and mix through the carrots.

Step 3

Squeeze lime juice over the , then add the toasted , , a generous pinch of salt and lots of cracked black pepper. Pick from the stem and add to the bowl, and gently mix everything together. Taste, and add more salt and pepper if needed.

Step 4

Transfer to a platter and serve.

This salad comes together super quick and is best fresh, so assemble it right before dinner goes on the table. If you need to prep ahead of time, grate the carrot, pat it dry with a paper towel, and store it in a container in the fridge, these will be good for 3-4 days. The sesame seeds can be toasted and stored in a container or jar until needed.

Very quick salad, I dont like grated carrot (random quirk of mine) so julienned. I also added very thin slices of onion. Served with grilled chicken.

Quick and easy after a long day at work and minimal cleanup was a bonus. It also contains ingredients I always have on hand, so I can see it going into rotation for a quick meal.

So few ingredients- so much punch! This is really quick to whip up & the ginger & sesame oil give this a fantastic Asian style. Served with simply baked fish it added all the flavour needed to produce a delicious fast meal. My ginger was quite young & spicy so this had a great gingery heat, so adjust to taste.

I am always looking for ways to elevate veggie dishes and this one didn't disappoint. I didn't have fresh coriander and fresh ginger so subbed for both ground ginger (a tablespoon) and ground corriander leaves (a teaspoon). Topped with a garnish of parsley. The sweetness of the carrot is complimented by the flavours from the toasted sesame seeds and lime juice which would make Bugs Bunny proud that he can have his carrots and corriander too!
