I’m sure some customers wouldn’t mind if all we sold were chicken schnitzel wraps all day long. People cross town for these and get upset when we sell out (which we always do).

2 pieces chicken schnitzel

For Spreading

aioli, for spreading

cos lettuce, coarsely chopped

1 tomato, sliced

4 slices cheddar cheese

1 lemon, halved

1⁄2 lebanese cucumber, sliced

Start cooking

Preheat a flat sandwich press (optional).

Step 2

Spread the aioli evenly over the . Top with a row of lettuce and . Season with pepper then crumble the over the top.

Step 3

Slice the diagonally and place along the . Squeeze with and top with . Season with salt.

Step 4

Fold the bread over at each end of the row of filling. Bring one side over the top and fold and roll, pressing down slightly to flatten, until you have a nice tight wrap.

Step 5

If desired, place in a sandwich press for 5 minutes. If you don’t have a sandwich press, warm the first and eat untoasted.
