Wonton Filling

500 g minced lean pork

1⁄2 head cabbage (Napa cabbage), finely chopped, soaked in salt

2 tsp salt, for soaking cabbage, plus extra to season if needed

1 ‒ 2 tsp ginger, minced, to taste

3 tsp garlic, minced

2 spring onions, finely chopped

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp Chinese cooking wine

1 tsp chicken bouillon

cracked pepper, to taste

2 packets wonton wrappers, separated, from the fridge section at woolworths or coles

Dipping Sauce

2 tbsp soy sauce

1 tbsp crunchy chilli oil, adjust to taste

1 tbsp rice wine vinegar

spring onion, finely sliced, for garnish

sesame seeds, for garnish

Wontons

Step 1

Finely chop the , combine with 2 tsp salt and let it soak for 20 minutes. After the time is up, squeeze out any excess liquid and pat dry before placing it in a big bowl.

Place a small amount (about 1–2 tsp) of into the centre of a separated . Less is more, especially when you’re getting the hang of it. Keep a small bowl of nearby. Wet the edges of the wrapper with water so it sticks.

Step 4

Fold the over once into a triangle shape, pinching the edges to seal. Using a little more water, bring the two ends of the triangle together and press to seal, forming the wonton shape. Repeat until all the is used, or freeze any remaining mixture in an airtight container for later use.

Boil water over medium heat and place a steam basket on top. Add your Asian vegetables and let them steam until done (usually 6–8 minutes).

Step 6

If you are steaming your , place baking paper with holes in it in the steam basket. Add 6–8 wontons inside, making sure they aren’t close together or they’ll stick. Cover with a lid and steam for 12 minutes.

Step 7

If you are boiling your , place them in a pot of boiling water. Once the water is boiling, add the wontons and cook for 5–6 minutes or until they rise to the top. Once risen, let them cook for a further 3 minutes.
