This is my favourite breakfast, packed with protein before a full day at work.

1⁄4 cup cherry tomatoes, quartered

1⁄4 tbsp french shallot, finely chopped

2 crispbreads (whole grain Wasa)

2 hard-boiled eggs, sliced

chilli flakes, for garnish, optional

Very simple to make and delicious! No tomatoes as not in season and expensive and no need for garlic salt either. Served on pieces of sourdough for a more substantial lunch.

A tasty dish to start the day. Replaced a few ingredients as didn’t have some ingredients listed in the recipe : potato bread instead of crisp bread at home, crumbled feta instead of cottage cheese , roma tomato instead of cherry tomatoes.

This was quick and easy to make! I would use a little less lemon juice than it calls for but all the flavors balance out nicely!
