Chicken Marinade

400 g chicken thigh, diced into 2cm pieces

1⁄2 tbsp shaoxing cooking wine

1⁄2 tbsp soy sauce

1 tsp dark soy sauce

1⁄2 tsp five spice powder

1⁄2 tsp salt

1⁄4 tsp white pepper

Vegetable Stir Fry

2 bunches chinese broccoli, stalks and leaves separated, stalks cut into 3cm pieces, leaves roughly chopped

1 capsicum, diced into 1cm pieces

1 onion, sliced into 1cm slices

1 zucchini, diced into 1cm pieces

2 cloves garlic, finely chopped

1 packet soba noodles, about 270 g, cooked according to packet instructions

1 ‒ 2 tbsp neutral oil, for stir frying

chili oil, to serve, optional

Soba Noodles Sauce

2 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp mirin

1⁄2 tsp dark soy sauce

1 knob ginger, small, grated

Start cooking
Step 1

Combine diced with , , , , , and . Let it marinate for 10 minutes while preparing the sauce and vegetables.

Prepare the soba noodle sauce by mixing , , , , and grated in a bowl.

Cook in boiling water according to packet instructions. Drain and run under cold water to prevent sticking. Set aside.

Step 5

In a hot wok or large pan, heat 1 tablespoon of neutral oil. Cook marinated chicken for 5–10 minutes or until fully cooked. Remove from the pan and set aside.

Step 6

Add another tablespoon of to the pan. Cook for 5 minutes.

Step 7

Add and ; cook for an additional 3–5 minutes.

Step 8

Add and , and stir fry briefly until just tender.

Step 9

Add finely chopped and return the cooked to the wok. Stir fry for 1 minute until fragrant.

Step 10

Add the cooked back into the wok. If the noodles are stuck, run them under cold water and gently shake to separate.

Step 11

Pour the prepared soba noodle sauce over the and toss gently to combine everything evenly. Stir fry for 1–2 minutes until heated through.

Serve topped with chili oil, if desired.

For soba noodles, I like to use the Hakubaku brand. You can find these in the Asian aisle of your local supermarket or in an Asian grocer. Follow the packet instructions to ensure you don't overcook the noodles for stir fry. If you overcook the noodles, it's likely they will break when you combine them with the vegetables.

Be gentle when you combine the noodles with the vegetables. I like to use tongs to slowly push the vegetables into the noodles.

Worked fine w. pork mince and omitting five spice.
A lovely sauce that used ingredients I already had on hand. It was also great to use up a lot of vegetables that were leftover from the week. Really enjoyed the texture of the soba noodles which were easy to cook and aren’t something I’d used at home before! Will definitely be cooking with more soba noodles in future.

Absolutely delicious! I did sub some veges to suit what I had in the fridge. I used chopped carrot instead of capsicum and broccolini instead of Chinese broccoli. It would be flexible to use what you have, just consider when you need to add different veg types according to how long they take to cook. Perfect amount of marinade for the chicken to not be swimming in.
